The Macallan Sherry Oak 12 Years Old is a single malt Scotch whisky from Speyside, matured exclusively in sherry seasoned oak casks. It belongs to the Sherry Oak collection – a range of single malts matured in sherry seasoned oak casks brought over from Jerez, for richness and complexity.

The distillery operates in the heart of Speyside and its history dates back to 1824. What sets this whisky apart happens before the casks are ever filled with spirit. Casks of European and American oak spend time in Spanish bodegas, where they are filled with sherry wine to season them. For the following months the sherry rests in the oak, after which the casks are emptied and transported to the distillery in Speyside, where they are filled with new make spirit. The Macallan Sherry Oak 12 Years Old matures for a minimum of twelve years on the Speyside estate and is regarded as a classic example of the influence of sherry seasoned oak casks. After twelve years the whisky is bottled at its natural colour – with no added caramel.

The profile is led by notes built around oak and dried fruits. On the nose, dried fruits, candied citrus peel and oak, with hints of ginger and nutmeg. On the palate, raisins and sultanas with ginger syrup, giving way to sweet cinnamon and a note of vanilla. The finish is long, with oak and warming ginger. Independent tastings also bring out dark chocolate, orange and a note of cherry, while the structure is sometimes described as silky and rounded. The taste opens with raisins and figs and plenty of marmalade, followed shortly by warming spices and brown sugar, and later walnuts and cocoa.

The 40% ABV version is intended for markets outside the USA. The producer recommends it as a dram to share with friends – neat, over ice, with water or in cocktails such as the Blood and Sand.
