Heering Cherry Liqueur is a Danish cherry liqueur from Copenhagen, produced according to a recipe from 1818 and regarded as the world's first commercial cherry liqueur. It is bottled at 24% ABV.
The brand was founded in 1818 by Peter F. Heering, a merchant trading in colonial goods at the port of Copenhagen, who saw potential in a cherry liqueur recipe he received from the wife of his former employer. The base of the liqueur is Danish Stevns cherries, harvested in August. Heering Cherry liqueur is made according to the 1818 recipe from Danish Stevns cherries picked in August; the fruit is crushed together with the stones, which gives Heering its characteristic almond note. Herbs and spices are added before maturation, after which the liqueur rests in oak casks for at least three years. The producer emphasises that the drink is made exclusively from natural ingredients. Cherry Heering liqueur is produced solely from Danish cherries, spirit and spices, without artificial flavourings or colourings.
In the glass it appears deep ruby, almost opaque. On the nose, intense cherry aromas give way to notes of coriander and marzipan. Deep, multi-layered scents of ripe black cherry open first, followed by warm baking spices and a delicate almond sweetness derived from the crushed stones, with a subtle hint of bitter chocolate lingering in the background. On the palate the entry is juicy, with cherry compote that is bittersweet rather than candied; the mid-palate brings clove and dark chocolate along with a persistent nutty note, while the texture is velvety and full, with a weight unusual for a liqueur at 24%. The finish is long and smooth, with a subtle spice structure; lingering cherry and gentle oaky warmth gradually fade, leaving a characteristic almond echo.
Heering is a historically cited ingredient in several classic cocktails. It is a cherry liqueur historically specified in a number of canonical cocktails, including the Singapore Sling and Blood and Sand. It can also be served neat in a small glass at cool room temperature, or over an ice cube.
