Talisker The Wild Blue is a limited edition single malt Scotch whisky from the Talisker distillery on the Isle of Skye, finished in South African red wine casks. For 16 months the whisky matured in carefully selected red wine casks from South Africa's coastal regions – a first in the history of Talisker single malt. Bottled at 48.2%.
Talisker is the oldest distillery on the Isle of Skye, located in the village of Carbost on the shores of Loch Harport. It was founded in 1830 by Hugh and Kenneth MacAskill on Loch Harport and for almost two centuries was the only distillery on Skye, until Torabhaig opened in 2017. The distinctive peppery note comes from the U-shaped purifier pipe on each wash still, which returns the heavier condensed vapours to the pot for redistillation before the spirit passes to the worm tub condensers.
The release was inspired by the sea surrounding the distillery. Drawing on their rugged coastal home on the Isle of Skye, the Talisker whisky makers sought out wine casks from beside the Atlantic for this finish. The whisky is not always bottled at natural colour – according to some sources it is coloured with E150 caramel – but it is non-chill filtered, which preserves the full flavour profile.
The nose is dominated by a combination of maritime smoke and fruit derived from the wine casks. It brings together classic Talisker smoke with lively, vinous fruit: sea breeze, iodine, peat smoke and smouldering wood form the backbone, while candied raspberries, cranberries, figs, plums and sultanas add colour, alongside savoury notes of bacon and ham as well as honey, vanilla and cedar. On the palate, enlivened by the 48.2%, Talisker's peppery spice and coastal peat appear, followed by a wave of cranberry, blackcurrant, cherry and plum, with caramel, sea breeze and wine cask tannins building structure; the finish is medium-long, dry and smoky – peat, ash, salted caramel, red fruits and a fading sea saltiness.
The release was created in partnership with the Blue Marine Foundation. Every promotional bottle produced for worldwide distribution means a donation of £3 to Blue Marine, with a total donation of £112,608 regardless of the number of bottles sold. The whisky is presented in a bottle made from 100% recycled glass with a ceramic detail, without traditional outer packaging.
