Jim Beam Black 7 YO is a Kentucky Straight Bourbon carrying a seven-year age statement, bottled at 45%. The brand has returned to an age declaration after years of the "Extra Aged" designation: Jim Beam Black was relaunched with a new look, a higher strength and a new age statement – Beam Suntory dropped the "Extra Aged" wording and reinstated the age declaration, albeit one year shorter than the last one the brand carried, while the strength was raised from 86 to 90 proof.
The bourbon is produced at the distillery in Clermont, Kentucky, under the supervision of Master Distillers Fred and Freddie Noe. It is matured for a minimum of seven years in new charred white oak barrels. This sets it apart from the standard Jim Beam White Label, which is aged four years. The producer describes the seventh year in barrel as the moment when the spirit comes into its own character, taking on a deep, golden hue.
On the nose, grain and oak lead the way: the standard aromas of subdued oak and vanilla open the bouquet, followed by gentle caramel and cinnamon, along with a subtle nutty accent typical of bourbons distilled by Beam. On the palate come vanilla, the peppery bite of white pepper and fresh oak, followed by a hidden hint of cinnamon that builds on the peppery note. The structure is light – a thin, watery palate, which is surprising given this strength and age.
The finish follows the same path. The transition into the finish brings a slightly sweet note of vanilla cream, quickly followed by mixed pepper and oak alongside pronounced vanilla, moving into a dry oak-and-vanilla accord with barely perceptible spice, short and straightforward. The producer recommends serving it neat, on the rocks or in an Old Fashioned cocktail. The set includes two glasses.
