PAWLINA 66 is an exceptional Tennessee Whiskey aged and bottled exclusively for M&P PAVLINA. It is the fruit of a collaboration established 5 years ago with a distillery operating in the small town of Columbia, Tennessee, located about 40 minutes from Nashville. The whiskey was produced from a grain mash bill consisting of 80% corn, 10% rye and 10% malted barley. Before being filled into barrels, the distillate was filtered through charcoal made from sugar maple. This process is known as the Lincoln County Process. The whiskey matured in American oak barrels that were heavily charred to level no. 4. The process takes about 55 seconds and results in a deeply cracked barrel interior resembling alligator skin. A barrel prepared in this way ensures greater contact between the maturing distillate and the wood, as well as access to its various layers, which help draw out more unique and subtle flavours. The fourth level of char also provides another benefit – natural filtration. The layer of charcoal created during the long charring acts as a filter and traps unwanted compounds. In addition, Tennessee's suitable climate, characterised by frosty winters and hot summers, provides ideal conditions for maturing whiskey. Sixty-six barrels were set aside for bottling the first edition. This number also refers to the year 1966 – the year of birth of M&P's founder, Mirosław Pawlina. The aroma is light and sweet, full of notes of vanilla, corn and oak, complemented by accents of red stone fruits, spices, tobacco and leather furniture. On the palate: caramel, molasses, vanilla, brown sugar and maple syrup, balanced by notes of cinnamon, nutmeg, cloves and the delicate dryness of charred oak. Together it makes for a very pleasant whiskey that can be drunk neat, over an ice cube, or with mixers in your favourite cocktail.
