GlenAllachie 8YO Scottish Virgin Oak whisky was initially matured in bourbon casks made from American oak (Quercus Alba) and then finished for around 18 months in casks made from sessile oak (Quercus Petraea) sourced from Scotland's Atlantic coast. The Virgin Oak series aims to explore the influence of the type of oak, its origin and terroir on the development of flavours and aromas during the whisky maturation process. Scottish oak is very rarely used for cask production due to its limited availability and very high prices, its tendency for the trunks to twist and the presence of knots, which poses a major challenge for coopers when creating staves. Additionally, the porosity of the wood increases the risk of the cask leaking. Before filling, the wood was air-seasoned outdoors for a period of 36 months, and the casks made from it were toasted and charred to a medium level. On the nose, baked oat flakes, toffee with notes of cinnamon, ginger and heather honey. On the palate, heather honey, orchard fruit and lemon peel, followed by white chocolate, cinnamon, ginger with toffee and caramel on the finish. The whisky has been bottled at 48% strength, in its natural colour and without cold filtration.
