A limited edition whisky from the Kilchoman distillery, which spent its entire maturation period in Sauternes wine casks. Maturation in Sauternes wine casks is a major challenge for whisky producers, especially full-term maturation. That is why it is so rarely encountered. The first Kilchoman Sauternes edition, from 2016, matured for 5 years in fresh (first fill) Sauternes casks. The second edition, released in 2018, was finished for 5 months in Sauternes casks. The 2024 edition is a composition of whiskies distilled in 2017 and 2018, which matured in a combination of first fill and refill casks. Anthony Wills, the founder of the Kilchoman distillery, decided to combine the whisky in proportions of 22% from fresh (first fill) casks and 78% from so-called refill casks. Most of the selected refill casks had previously been used to finish the 2018 edition. The composition of the casks used helped to maintain a perfect balance between the influence of the sweet wine cask and the character of the Kilchoman distillate. In this whisky we find a perfect balance between buttery sweetness, notes of grilled pineapple, candied ginger and peaty smoke. On the nose, notes of butter biscuits, ripe fruit, salty sea air and subtle notes of peaty smoke. On the palate, toffee and vegetal accents combine with tropical and candied fruits as well as well-integrated peaty smoke. A finish with long-lasting sweetness balanced by clean, persistent smoke and a rich texture. The whisky has been bottled in its natural colour, without chill filtration and at a strength of 50%.
