The Spirit of Hven Distillery is located on the island of Hven in the Øresund Strait between Denmark and Sweden. It is a world-unique, one of the smallest commercial distilleries in the world, where the entire process, from mashing to fermentation, distillation, maturation and bottling, takes place on site. Malting is also partially carried out here, especially of grains with exceptional character. Small-scale production provides enormous benefits when seeking to extract maximum aroma and flavor from the resulting spirits. Additionally, there is also a laboratory here where product analyses and new recipes are conducted, also for other distilleries around the world. Production is overseen by the owner and Master Distiller, a chemist by training, Henric Molin. At Spirit of Hven, emphasis is placed on using local raw materials. Many of them come from the island of Hven, and the rest are always local Swedish grains and fruits (in the case of distillates other than whisky). Fermentation lasts approximately 7 days. The distillery is equipped with traditional pot stills, column stills, a Coffey still built based on the original drawings of Aeneas Coffey, as well as small 100-liter pot stills for producing small batches of distillates. All warehouses are located in Hven, so all maturation takes place on the island. The stocks date back to 2008 and currently number many thousands of barrels. The average maturation time is approximately 7 years. The distinctive conical bottles, sealed with wax in various colors, catch the eye. In addition to whisky, many varieties of vodkas, gins and aquavits are produced here.
