Payen is the pride and the result of the Tabali team's intense work in creating a wine of the highest quality. Composed of over 90% Syrah grapes, with an addition of Cabernet Franc sourced from vineyards located near the Pacific coast, in the Limarí Valley in northern Chile. The fruit used to produce this wine comes from the finest parcels, planted in 1997. Only 3.39 hectares of cultivation (out of 180 ha) were qualified for the production of this unique wine. From the way the vine is trained to the harvest, the grapes are under the special supervision of the winemaker – so that the fruit meets the highest quality requirements. Vinification takes place in small stainless steel tanks, and 30% of the grapes are fermented in French oak barrels. The wine then ages for 18 months in French oak barrels (90% new). Typical of Syrah, a deep red colour with violet reflections. On the nose, aromas of fresh cherries and blackberries, with notes of violets and black pepper. The wine's spicy character is softened by an elegant touch of oak and smoke. On the palate full, balanced, with a very intense concentration of fruit and velvety tannins. The aromas of the oak barrel, perfectly integrated with the fruit, lend the wine depth. A long and soft finish.
